Tomato Carpaccio with Fresh Sheep Cheese

Ingredients

  • 200 g fresh sheep cheese

  • 200 g ripe tomatoes

  • 80 g pumpkin seed pesto

  • Apple balsamic vinegar

  • Grated pumpkin seeds

  • 4 leaves of Lollo Rosso lettuce

Preparation

  1. Prepare the Ingredients:

    • Slice the tomatoes and fresh sheep cheese into thin rounds.

  2. Assemble the Carpaccio:

    • Place 3 slices of tomato on each plate.

    • Spread a small amount of pumpkin seed pesto over the tomato slices.

    • Top each with a slice of fresh sheep cheese.

  3. Add More Pesto:

    • Spoon a little more pumpkin seed pesto over the cheese.

  4. Add the Lettuce:

    • Place a leaf of Lollo Rosso in the center of each plate.

  5. Finish:

    • Sprinkle with grated pumpkin seeds.
